Chuck, you better google horseradish, sauerkraut, and every thing else imaginable. As I made it all growing up! I used to love eating the sauerkraut right out of the 50 gallon stone crock the minute the rotten leaves were scooped off! Cleaned the old colon right out the next day too. But there was nothing like it. Best kraut in the world. However we canned the rest and it just was not as good after being canned as the day we cracked open that big fermented crock of salted cabbage!
