I have a new recipe for you guys. I had this at a local restaurant (Kitchen Chicken) and fell in love with it. It is actually a HEALTHY dish. Doing a search online it appears that this restaurant is a Florida thing although they now have their first one opened in Houston Tx.
It's their original Chop Chop and I have now duplicated it at home.
Make some boneless, skinless chicken breasts any way you want. Grilled, broiled, on a George Forman, whatever. Basic stuff - salt, pepper, dash of EVOO.
Make some yellow rice. The packaged stuff in the store is fine.
This dish doesn't need to be served hot so take your time at doing things. It's actually very good COLD.
Take your plate and put a bed of yellow rice on it.
Cube some chicken and put that over the bed of yellow rice.
Top it with some fresh homemade Salsa. If you don't make your own I can give you a recipe for that as well. From the grocery store at least buy the Restaurant Style Salsa in the cooler section. The Jar stuff on the shelves is crap.
Top that with some fresh shredded lettuce.
Top that with Curry Mustard - WHAT ??????
The curry mustard is what sets this dish apart from others. It doesn't sound like it would be good but I'm telling you - it's addicting. My head is now spinning trying to think of what else I can put this stuff on.
Curry Mustard Recipe:
Very simple.
4 Tbsp Light Mayonnaise
2 tsp Yellow Mustard
1 tsp Curry Powder
4-5 Tbsp water
Simply add all the ingredients and whisk it up.
You WANT to use light mayo. This is not an attempt to make it lower in calories. It simply tastes better. You WANT this stuff to be watery. It's a dressing - not a spread.
Pour some of this stuff over your chop chop and be ready for a new addiction.
