Tonight I am making my world famous meat balls. It has been a long time since I made them because it has been a long time since I had the freezer full of pork and beef. You will need a spice grinder for this one.
1 lb of lean ground beef
1 lb of lean ground pork
3 slices of dried then crumbled GOOD italian bread
1 Egg
1 teaspoon black pepper 2 teaspoons dried parsley 1 1/2 teaspoons dried Italian seasoning 1 teaspoon garlic powder (you can use 2 tablespoons fresh garlic in place of the powder) 1/8 teaspoon dried red pepper flakes (can use more if desired) 3/4 teaspoon crushed anise seeds (can use crushed dried fennel seeds) 1/2 teaspoon paprika 1 teaspoon minced dried onions 2 teaspoons salt
You need to use your spice grinder to grind up the anise seed. Additionally you should mix this together and let work overnight in the refridgerator.
Form into meatballs and fry over medium heat in a skillet with one tablespoon of LARD.
